They consist of only butter, sugar and flour and are often flavored with vanilla. In this recipe, we use salted cherry blossoms to add just the right amount of saltiness to these buttery cookies. You can taste the cherry blossom aroma that is the highlight of these cookies.
The texture of the cookies is “crispy” rather than rubbery or soft. Usually the dough needs to be chilled for easy handling. Chilled dough gives cookies clean, sharp edges and holds their shape better in the oven.
Typically, with this type of cookie, the dough is rolled into a cylinder, cooled, and then cut (or rolled, cooled, and cut).

I have made butter cookies with both sugars and they both work so you can experiment and decide. For this recipe, I used powdered sugar because I read in an article that granulated sugar in butter cookies does not dissolve completely during baking. Since butter cookies do not contain liquid, the cookies have a rough texture.
Again, you can make butter cookies with any flour. Butter cookies should be slightly crunchy because they are high in butter (fat). If you use all-purpose flour, they will be slightly stronger than cake flour (preferably a mix of both). Cake flour gives a light texture and I think it goes best with this cherry blossom recipe.
