Our dinner started with Mr. Chan’s special cured pork bowl – a wonderful combination of traditional Sichuan meat and sausage. We love meats that are full of flavor.
To follow, a refreshing plate of Celtus salad with onion oil graced our presence. We love the beautifully crunchy texture of Celtus and its fresh, slightly sweet taste with onion oil. It is simple but very beautiful.
Sweet, Sweet Freedom. Again.
Mainly, we fell in love with duck tea. It only takes one bite of the hidden jade tea-infused duck to understand why it has become one of the restaurant’s signature dishes. Simply put, the dish is all about the rough skin of the duck โ obtained through the painstaking process of drying and roasting the duck. The tender duck meat, though tasty, plays a supporting role in this case, with a bit of duck skin taking center stage with the lovely smoky tea flavor. With a mix of hoisin sauce and fluffy butterfly in steamed buns, this dish is tempting and a must-try.
Equally delicious, this dish of kung pao prawns with rice cakes was one of our favorite dishes from our evening at Hidden Jade. The laziness of the lobster beggars belief. Richly flavored with garlic and Sichuan spices, this dish boasts the distinctive smoky flavor that accompanies regular wok-toss ingredients.
Hot fish fillets (another chef’s special) continue the tradition of delicious dishes. Melt-in-your-mouth slices of incredibly fresh fish arrive in a gloriously golden hot pot of chilli and doubanjiang-based broth. Just wondering.
Our savory courses ended on a savory note with baby abalone in chicken broth and rice. Baby abalone is cooked to perfection – tender and creamy with natural salt. Along with fluffy rice, it’s the perfect comfort food.
