Southern Highlands Must Do’s
But before you enter the club’s members-only bar, stop to check out the door ominously marked ‘The Tunnel’. During the fast-track excavation during COVID-19 to open the Berrima Vault – a unique concept in Australian hospitality: part luxury accommodation, part intimate local hangout – the team found some of the lore about the historic building to be true.
Taylor’s Inn, hand-built by convicts in 1844, was a latecomer to Breim’s fortunes. By then, the thriving training station, midway between Sydney and what would become Canberra, had become even more profitable – thanks to the prison taking in prisoners in 1839.
Did the clever guards really delay their arrival until the prison closed for the night, so they could lock their prisoners in the inn’s two underground dungeons while they enjoyed being drunk upstairs? Perhaps, but even the locals doubted the legend that a tunnel built by convicts connected the inn to the prison.
Why build a tunnel when you can walk with prisoners on the other side of the road? Some believe the tunnel was used to smuggle “ladies of the night” into the prison, but other inmates escaped for several hours.
The Seidler House
The Englishman Simon Philby, who is his brainchild, readily admits that he and his colleagues were inspired by the Soho house phenomenon. International house Soho began on London’s Greek Street in 1995, when restaurateur Nick Jones opened a venue intended to be the opposite of the stuffy establishment clubs of the Georgian era, when Beau Brummel, David Garrick and Samuel Johnson strutted their stuff.
Brima has little in common with Soho. As Philby points out, Britain’s closest comparison is the NSW southern highlands of the Cotswolds – equally populated by affluent urbanites who live in historic honey-coloured stone buildings while lamenting the buzz of city life.
It’s 7pm when I arrive, missing the signature cocktail next to the ‘largest prison dock built in the southern hemisphere’.
There’s just enough time to go into Kortop’s house and take a quick shower. But it’s enough to appreciate just how special this boutique three-bedroom apartment on the first floor of the hotel is – reinvented by Philby’s interior designer, Carly, and decorated with sympathetic art curated by Ali Hillman (whose career was largely based on dealings with American billionaires. ) .
Southern Highlands Estate With Jaw Dropping Conservatory For Sale
Host Jason Cooley offers a whirlwind tour of the property before introducing British-born executive chef Tommy Prosser (formerly of Alain Roux’s Waterside Inn, Britain’s famous three-Michelin-starred restaurant).
Tonight’s club menu is simply disappointing: smoked salmon, pie and mash, Eton mess. However, two fireside companions – a corporate couple who fled Singapore to the Southern Highlands when the pandemic hit – whisper that, in keeping with the property’s zeitgeist, Prosser prefers not to commit.
The starter comes as a platter of Tasmanian smoked salmon, Japanese horseradish, avocado puree, cream cheese, fennel salad and apples.
As for the “pie and mash”? Tonight’s pie, Prosser says, is “Grass-fed Southern Highlands beef and onions with a homemade pastry base, pumice paste and roasted red cabbage with cafe de paris butter and jus.”
Tucked In The Southern Highlands, A Fresh Take On The Country Club
The dessert comes as a beautifully structured ‘gossip’, made with Kangaroo Valley eggs, crushed berries and South Pacific cocoa.
It was all washed down with a glass of recommended shiraz, the night before last month’s soft opening, by the fireplace I was recently met by sommelier Linda Lambrecht’s extensive wine list, which showcases the region’s vineyards alongside internationally renowned labels.
My fellow diners represent the core market that Philly and company are targeting: affluent, well-traveled, and increasingly working via Wi-Fi from home.
Safe in the Southern Highlands, spared the trouble of getting dressed and going to an office in the city center every day, they are still missing something, according to Philby.

My foodies agree. Their home network is intermittent and they miss the camaraderie of meeting like minds over coffee or lunch.
So they paid to join this quirky country club, with its 5G connections, hippie vibe and refereeing heritage.
I take petit fours upstairs, watch football on TV and then retire with a rare and irreverent volume on George Bernard Shaw. Courthope’s library alone is worth returning for.
It’s frosty over the windows when I’m awake, but I’m warming up downstairs with Prosser’s underrated Bacon Batty (Fialigo Estate Bacon, local sauces) and another fireplace in Taylor’s Inn cafe, which is already full of moms and dads.
Best Southern Highlands Getaway: Where To Stay, Eat, Drink & Explore
This is what makes the Berrima dome so difficult to explain. Taylor’s Inn Cafe is open to all comers. The Courthope apartment (which includes access to all the club’s facilities) is a ground-breaking exercise in how to renew and address the essence of what came before, requiring deep pockets to book.
If you get them into hotter clubs, some of his probing questions will make you miss a blackball moment: What value do you bring to society? Your cocktail of choice? your favorite song? pet name?
But members can bring up to three guests to visit, can enjoy a “curated cultural program of virtual and external activities, events and global alliances” and can meet creative minds, entrepreneurs and business executives who missed the spark of the Cross. -pollination during a pandemic.
It’s hard to miss the club’s two booths, which have been repurposed as private dining rooms and already host board meetings and poker nights. And there’s a playroom for kids, a beer garden, custom music.
